Steps to Complete
Prepare dough: Combine yeast with a tablespoon of sugar and add warm water. Set aside to proof for 10 minutes or so, until the mixture appears frothy. Add sugar, salt, eggs, butter and enough flour to create a batter. Stir in remaining flour and knead dough for 5 minutes, alternately you can place dough in the bowl of a stand mixer and knead on med-high speed. Place in a greased bowl, cover with plastic wrap, and chill in fridge for 8-10 hours or overnight.
When ready to assemble rolls, prepare the filling: Blend cream cheese, powdered sugar, and lemon zest with hand mixer on medium speed until the combination appears smooth and creamy. Set aside.
Split dough in half, setting one piece aside. Roll one dough mound out to a large rectangle. Spread half the cream cheese filling from edge to edge on rolled out dough. Spread half the strawberry jam over cream cheese filling. Top strawberry jam with half the Pirouluxe cookie crumbs. Roll dough up jelly-roll style and slice into twelve equal dough rolls. If you've done it right, this will probably be a sticky mess. Place rolls on a greased cookie sheet and top with greased plastic wrap. Set in a warm place to rise for one hour. Repeat process with remaining ingredients.
After rolls have proofed for one hour, preheat oven to 375-degrees F. Remove plastic wrap and bake rolls for 15-20 minutes, until just turning golden on the tops.
While rolls are baking, prepare glaze: combine all glaze ingredients and whisk thoroughly to reach a smooth texture. When rolls have finished baking, let cool on sheet for 5 minutes before drizzling with glaze and removing to a wire rack to continue cooling. Top glazed rolls with additional Pirouluxe cookie crumbs. Makes 24 sweet rolls.
