Steps to Complete

Step 1

1) Preheat oven to 350-degrees and line a cookie baking sheet with parchment paper. Set aside.

Step 2

2) Beat 1 cup butter, powdered sugar, and granulated sugar together at medium speed until fluffy, 2-3 minutes. Add egg yolks and desired amount of green food coloring.

Step 3

3) Stir in baking powder and salt, until well combined. Add flour and stir until just incorporated. Shape dough into 1-inch balls and place on cookie sheet 2-inches apart.

Step 4

4) Bake in preheated oven for 10-12 minutes.

Step 5

5) Meanwhile, melt chocolate chips, cream and 3 tablespoons butter in microwave safe dish for 30 seconds, or until the mixture can be stirred smooth. Set aside to cool for 10 minutes or so.

Step 6

6) Remove cookies from oven and cool for 2 minutes on sheet. Remove to cooling rack, and continue to cool at least another 15 minutes.

Step 7

7) Spoon ganache into ziplock bag and snip off corner. Drizzle ganache over cooled cookies.
Sprinkle Pirouline crumbs over ganache and set aside to set for 1 hour.

8) Makes 32 cookies.
