Steps to Complete

Step 1

Preheat oven to 400°F

Step 2

Bring water, butter, sugar and salt to boil in thick bottom 2 quart sauce pan.

Step 3

Remove from heat and add all flour at once stirring briskly with wooden spoon to incorporate.Place over medium heat and keep stirring for one minute or until pastry balls up and cleans itself off of the pan.

Add 1 egg at a time, stirring vigorously until each egg is absorbed into dough.Continue with each egg.

Step 5

Remove from heat and allow to cool slightly.
Place in pastry bag and form éclairs on sheet tray according to size desired.
Place in oven for 20 minutes.

Step 6

15 mins
Remove from oven and allow to cool. Cut in half length wise using serrated knife.
Whisk together whipped cream and dulce de leche. Place in piping bag.

Step 7

Fill bottom of éclair and to with other half. Spread chocolate sauce on top of éclair and top
with Pirouline cookies. Garnish with Chocolate Sauce.
